Whipped Feta Dip with Blistered Tomatoes

The food processor does all the serious work of turning feta, cream, roasted garlic and black pepper into a luscious Whipped Feta Dip. Grill or broil some fresh cherry tomatoes from Dillner Family Farms, toast some bread, and pour glasses of wine for the guests. You’ll love this carefree appetizer.

WHIPPED FETA DIP WITH BLISTERED TOMATOES RECIPE

INGREDIENTS

8 oz feta cheese
½ cup heavy cream
¼ cup water
½ tsp black pepper
4 cloves garlic, roasted
2 cups cherry tomatoes
¼ cup extra-virgin olive oil
1 tsp sea salt

 INSTRUCTIONS

  1. Preheat oven to the broil setting.
  2. In a food processor, add feta, heavy cream, water, pepper, and roasted garlic. Whip until the mixture is smooth and creamy. Place in serving dish and set aside.
  3. Toss tomatoes with olive oil and salt, place on a sheet pan and broil (or grill) just until the tomatoes start to blister. Place on top of whipped feta, drizzle with more olive oil, and serve with crusty bread.
