Roast Chicken with Spicy Green Sauce
Description
A way to zest up your usual roast chicken dinner.
Ingredients
For the chicken:
- 1 tbsp kosher salt + 1/4 tsp
- 2 tsp smoked paprika
- 1 tsp ground cumin
- 2 garlic cloves, finely chopped
- 3 scallions, finely chopped
- 1 tbsp red wine vinegar
- 4 tbsp olive oil, divided
- 1 (3 1/2 lb) chicken, backbone removed and flattened with the heel of your hand
For the sauce:
- 1 poblano pepper, seeded and chopped
- 1 tsp Calabrian chili paste
- 1 cup packed cilantro leaves and tender stems
- 1/2 cup basil leaves
- 1/4 cup Italian parsley leaves
- 1 small garlic clove
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp freshly squeezed lime juice from 1/2 a lime
- 3/4 tsp kosher salt
