Roasting pears opens you up to so many new avenues.
Ingredients

- 5 pears, cut in half and cored
- 4 oz blue cheese crumbles (or substitute grated Manchego or Beemster Gouda with Cumin Seeds)
- 1/2 cup chopped pistachios
- 1 tbsp pink peppercorns
- 1/4 cup olive oil
- Salt and pepper to taste
- 3 sprigs fresh rosemary
Instructions
- On a baking sheet, arrange the pears cut-side up.
- Sprinkle each pear with blue cheese, pistachios, peppercorns, olive oil, and salt and pepper.
- Bake at 400 degrees until the pears are soft and the blue cheese is starts to brown slightly. Time depends on the ripeness and tenderness of the pears
- Garnish with fresh rosemary.
