Pasta Fagioli

Description

A delicious and kid-friendly meal.


Ingredients

Scale
  • 1 package (16 oz) dry navy beans
  • 12 cups water
  • 1 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 medium onion, chopped
  • 2 celery stalks, chopped
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp crushed red pepper flakes
  • Salt to taste
  • Pasta of choice

Instructions

  1. Day 1: Soak the beans overnight in water. 
  2. Day 2: Rinse the beans with fresh water. 
  3. In a large pot, cook the beans in water for 30 minutes.
  4. Meanwhile, in a skillet, heat the oil and sauté the garlic.
  5. Add onions and celery and cook until soft. 
  6. Add crushed tomatoes, pepper flakes, salt, and mix. 
  7. Add the contents of the skillet to the pot of beans and continue to cook until the beans are tender.
  8. Separately, cook pasta for 8-10 minutes or until al dente.
