A Slovenian delight.
Ingredients

- 1 onion
- 2 garlic cloves
- 2 tbsp oil
- 3-4 cups fresh beetroot
- 2 medium potatoes
- 1 qt vegetable soup stock
- 4 T parmesan
- 1/2 tsp salt
- Garnish (per portion)
- 1 tbsp crème fraiche
- Pinch of black sesame and fresh herbs to garnish
Instructions
- Peel and cut onion and garlic.
- Peel, wash and dice beets and potatoes.
- Preheat oil in a bigger pot. Add onion and fry until golden.
- Add garlic and mix with cooking spoon for a few seconds.
- Add beets and potatoes and fry for a minute, constantly mixing with cooking spoon.
- Add soup stock, parmesan and salt. Cook over medium flame for about 30 minutes.
- Use blender to achieve smooth, silky texture.
- Serve warm with a spoon of crème fraiche or sour cream.
- Garnish with black sesame and fresh herbs.
