- 24 fresh oysters, cleaned and half-shelled
- 1 cup finely chopped freshly roasted green chile
- 1/2 cup melted unsalted butter
- 2 cloves minced garlic
- 1/4 cup chopped fresh cilantro
- Pinch of salt and freshly ground black pepper
- Lemon wedges (optional)
Instructions
- Preheat the grill to medium-high heat, ensuring the grill grates are clean and lightly oiled to prevent sticking.
- In a bowl, mix the melted butter, minced garlic, and diced green chiles. Season the mixture with salt and freshly ground black pepper.
- Arrange the oysters on the grill with the flat side facing up. Grill them for approximately 2 minutes until they slightly firm up and the edges curl, taking care not to overcook.
- Spoon a generous amount of the green chile mixture over each oyster.
- Close the grill lid and continue cooking the oysters for an additional 2 to 3 minutes.
- Once grilled, carefully transfer the oysters to a serving platter.
- Sprinkle the chopped cilantro over the grilled oysters. For a touch of acidity, add a splash of lemon juice. Enjoy warm.
