- 12 baby beets, roasted and peeled
- 2 tbsp olive oil
- ¼ cup maple syrup
- ¼ cup bourbon
- Salt and pepper to taste
- Chopped parsley to garnish
Instructions
- Cut beets into halves or quarters to make bite sized pieces.
- Heat a pan over medium high heat, and add oil, beets and maple syrup.
- Sauté beets until warmed through and maple syrup begins to caramelize.
- Remove from heat and add bourbon.
- Return to heat and cook until liquid is reduced and beets are glazed. Season with salt and pepper to taste and garnish with parsley to serve.
