Smoke ‘Em If Ya Got ‘Em

This time of year, we’re okay with everything smelling and tasting like a campfire. The right woodsy cocktail transports us to the Laurel Highlands, where snow is falling and the Buffalo Plaid roams free. Smoking a drink is easier than we thought, and is possibly the only improvement on a good aged whiskey — 12 to 16 years, if you’re doing it right. Single malt.
In a small mason jar, add one sprig of dry rosemary. Light three Applewood chips and seal inside jar with the rosemary, after smoke starts to waft. Smoke jar for five minutes, then, with tongs, remove chips and rosemary. Pour two ounces of Knappogue Castle Irish Whiskey and swish around the inside of the jar. Decant into rocks glass through a mesh strainer (to sift any remaining wood and herbs).
